This Rich Language Has Many Forms
Burrito, Empanada, Enchilada, Toro,these words are familiar to many people who live in California, even if English is their native language. Think of the many dialects in both Central and South America. There is no more diverse a language than latin America Spanish, but the basis of it is the classic and romantic language born in Espana.
Many languages that have millions of both native and non-native speakers all across the globe have a lot of regional variations in dialect and even sub-languages. Other than perhaps Chinese, I cannot think of one more diverse than Spanish.
In Mexico, Latin America Spanish is influenced by its origins in Spain, as well as many Indian dialects from the past, such as Mayan, Aztec and even Olmec. In some South American countries, much remains in their form of Latin America Spanish, from the Incas.

When the Spanish arrived from the continent hundreds of years ago, there was an integration of both the regional dialects and classic Spanish and what formed was the ever evolving language of the region as it exists today.
Learning all the subtleties of a language
can only add to the richness and diversity of your experience with people in that country.
You may have, and probably did, learn classic Spanish in school, in which case, if you go on holiday to Mexico, Bolivia, Ecuador or Argentina, the local people will think you are speaking an alien language, the language on the street is so different from the classic Spanish.
